If you love steak salads but this one just isn’t quite right, try this balsamic steak salad with grilled corn and tomatoes. It’s an incredible summer salad!
ingredients needed for steak cobb salad
You will need:
- 1lb flank steak
- 8 slices bacon
- 4 eggs (hard boiled)
- 8 cups romaine lettuce (chopped)
- 1 cup cherry tomatoes (halved)
- 1/2 purple onion (thinly sliced)
- 1 avocado (sliced)
- 1 tablespoon olive oil
- Blue cheese if desired
HOW TO MAKE STEAK COBB SALAD
STEP ONE: Cook your hard boiled eggs and bacon. Crumble bacon.
STEP TWO: Pat steak dry with paper towel and season with salt and pepper on both sides.
STEP THREE: Heat olive oil in cast iron skillet until smoking hot. Then add the steak and cook for 3-4 minutes on each side. This usually cooks my steak to medium rare, but this depends on the thickness of your steak. Use a meat thermometer for better accuracy.
STEP FOUR: Remove steak and allow it to cool while you prepare the salad.
STEP FIVE: Add lettuce, halved cherry tomatoes, sliced avocados, sliced onions, sliced hard boiled eggs, and bacon crumbles to the top of your salad.
STEP SIX: Slice steak into thin strips and add to the top of your salad. Serve with your favorite dressing and enjoy!
