Ingredients for Roasted Pork Loin Filet with Vegetables
To make this recipe you will need:
- Smithfield® Marinated Roasted Garlic and Herb Pork Loin Filet
- 12oz broccoli
- 5-6 gold potatoes
- 1 cup baby carrots (or 2-3 large carrots, chopped)
- salt and pepper to taste
- 2 tablespoons olive oil
- 4tbsp of butter
- 1tbsp of minced garlic
Substitutions
If you don’t like the vegetables included, feel free to swap them out with any other vegetables! Here are some ideas:
- Asparagus
- Squash
- Zucchini
- Green Beans
- Brussel Sprouts
- Cherry Tomatoes

One of my favorite things about Smithfield’s pork loin filets is that you can cook them in the crockpot, grill, oven, air fryer, or Instant pot! Whatever your favorite method of cooking is, you can use it for this recipe.
How to make Roasted Pork Loin Filet with Herbs and Vegetables
STEP ONE: Preheat oven to 375 degrees and place Smithfield Marinated Pork Loin Filet into an oven-safe dish or pan. Place prepared vegetables in a dish or pan around the pork loin filet.
STEP TWO: Drizzle olive oil over vegetables then season with salt and pepper.
STEP THREE: Mix the butter and minced garlic together, melt it in the microwave, and drizzle over the top of the pork loin filet before baking.
STEP FOUR: Bake for 30-40 minutes per pound of pork OR until the pork reaches an internal temp of 165 degrees. If your vegetables are not fork tender by then, remove the pork filet and continue to cook the vegetables.
