Ingredients for one pot potato soup
Here is what you will need for this recipe:
- 6 strips of bacon (sliced into small pieces)
- 3 tablespoons of butter
- 1 onion (chopped)
- 3 garlic cloves
- 1/3 cup flour
- 2lbs potatoes (diced)
- 32oz chicken broth
- 2 cups milk
- 2/3 cup heavy cream
- Salt and pepper to taste
- 2/3 cup sour cream
- Shredded cheese, bacon bits, chives, sour cream, etc. for toppings
How to Make one pot potato soup
STEP ONE: In a large soup pot, cook sliced bacon pieces to desired crispness.
STEP TWO: Remove bacon and set it aside. Leave about one tablespoon of bacon grease in the pot. (I do not measure the grease out, just eyeball it.)
STEP THREE: Add butter and chopped onions to pot. Cook over medium-high heat until onions are translucent. Then add garlic and cook until fragrant.
STEP FOUR: Sprinkle flour over ingredients in pot and stir until smooth.
STEP FIVE: Add diced potatoes to pot along with chicken broth, milk, heavy cream, salt, and pepper.
STEP SIX: Bring ingredients to a boil and cook until potatoes are fork tender.
STEP SEVEN: Remove about half of soup and place into a blender and puree until smooth. Be careful, it will be HOT.
STEP EIGHT: Return the pureed soup to pot and add sour cream and bacon pieces.
STEP NINE: Simmer for about 15 minutes. Then serve with desired toppings.
