Mexican ranch taco bites can make for a fun dinner or a simple appetizer. They are easy to make and taste delicious.
I made these last Sunday and my kids said I was “the best cooker ever” and that they felt like they were having a “fancy dinner” (haha)! They are incredibly easy to make, take less than 30 minutes, and will make your kids think you are fancy.
MEXICAN RANCH TACO BITES INGREDIENTS
You will need…
- 12 flour tortillas
- 1lb ground beef (or turkey)
- 1 can (10oz) Rotel
- 1/2 cup ranch
- 1 taco seasoning packet
- 1 cup Fiesta style shredded cheese

- Fresh Squeezed Lime
- Salsa
HOW TO MAKE MEXICAN RANCH TACO BITES
STEP ONE: Preheat your oven to 400 degrees. While the oven is preheating, use a pizza cutter to cut your tortillas into squares. I do this by just trimming off the round edges of the tortillas.
STEP TWO: Grease a muffin tin with PAM or butter. Grease it really well so that your bites easily come out after they have cooked. Then stuff your tortilla squares down into each muffin cup. I use my hands to slightly “mold” the tortilla to the shape of the muffin cup. Once you’re done, all of your tortillas will likely look different, that is totally okay!
STEP THREE: Once the oven is preheated, place your muffin tin in the oven for about 10 minutes. Watch your tortillas and if they start browning or crisping then you can take them out early!
STEP FOUR: While the tortillas are baking, brown your ground meat. Once browned, drain the grease and add the taco seasoning, Rotel, and the ranch to the meat pan. Mix well.
STEP FIVE: Fill each tortilla cup with taco meat, trying your best to distribute the meat evenly. Top each cup with a pinch or two of cheese (up to you how cheesy you like it!). Then pop them back into the oven for 2-3 minutes or until the cheese is melted.
STEP SIX: Top with whatever toppings you love, and enjoy!
