Something that we started doing every year is have our close friends over for a “friendsgiving” the weekend after Thanksgiving. We usually do a pot luck type thing where the only rules are for everyone to bring a dish, wear comfy clothes, and chill out from the busy week. This is going to be our 3rd one to host this year! Last week I was invited to attend a friendsgiving with some of my blogger friends, so this year I get to have two friendsgivings! It was so much fun and I really enjoyed gathering around the table to talk all things blogging and family <3
The holidays can be absolutely insane so I have partnered with Minute® Rice to bring you a quick family recipe for this holiday season. It isn’t your typical Thanksgiving dish because I thought y’all might be tired of eating those by the end of the week. Instead this is a great meal to throw together for any night where your feeling overwhelmed and need to take a break. I plan on making it for the night before our Thanksgiving festivities so I can rest up and get other things finished before we travel. The prep time for this recipe is about 15 minutes! Which is amazing for anyone this season who is looking to catch a break.

This recipe is made with Minute® Rice, which takes only 5 minutes to cook! That’s it!!! Which makes the total prep time for this recipe about 15 minutes. I use both white rice and brown rice from Minute® Rice often, both are gluten free and a favorite in our house. Soon I am also going to share a quick fried rice with veggies recipe that I make with their brown rice!
1 lb beef stew meat
1 cup beef broth
1/2 cup soy sauce
1/4 cup brown sugar
3 garlic cloves
4 tbs corn starch
4 tbs water
12 oz. frozen stir fry veggies
2 cups White Minute® Rice
- Combine meat, broth, soy sauce, brown sugar, garlic cloves, corn starch, water, and frozen veggies into a crock pot.
- Cook on high for 4-5 hours.
- Follow directions on the Minute® Rice box for cooking the white rice.
- Top white rice with beef and veggies from the crock pot.
