Broccoli Cheese Soup Ingredients
These are the ingredients you will need to make this recipe:
- 4 tablespoons butter
- 1/2 onion, chopped
- 3 cloves garlic, minced
- 4 tablespoons flour
- 2 cups chicken broth
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/4 teaspoon smoked paprika
- 3 cups broccoli florets, cut into small pieces
- 1 large carrot, chopped into small pieces
- 2 cups half & half
- 2 cups shredded cheddar cheese
How to Make Broccoli Cheese soup
STEP ONE: Melt butter in a large pot over medium-high heat. Add onion and cook until softened. Add garlic and saute for another minute.
STEP TWO: Add flour and whisk until the flour turns golden. Then add chicken stock, broccoli florets, carrots, salt, pepper, and smoked paprika.
STEP THREE: Bring to a boil and then turn heat down to low. Allow the soup to cook until the broccoli and carrots are softened, about 15 minutes.
STEP FOUR: Stir in half and half and cheddar cheese. Leave simmering on low for a few more minutes.

How to Serve
Serve this soup as is or you can try the bread bowl I mentioned above. It would pair great with a side salad or breadsticks. The way I serve it? With grilled cheese!
