Breakfast is the best meal of the day. By far. How can you pass up fruit, eggs, bacon, waffles, French toast, sausage, oatmeal, cereal…do I even need to keep going? It is also the most important meal of the day for both you and your kids, but sometimes it can be difficult finding the time to feed the kids something nutritious before school let alone taking the time to make yourself something. I am all about the quick and easy meals…especially if they are also healthy. This strawberry blueberry parfait with oats is the solution to ALL of these problems. It’s super quick (you can ever prepare it the night before), it’s easy (only 4 ingredients), and so nutritious.
My toddler eats this and she loves it. Brandon could grab one out of the fridge and take it to work to eat if he wanted. Shoot, I just took the pictures for this blog post and now I’m eating it! My dog (Harley the Chocolate Lab) is side eyeing me from the couch wishing she could eat it. 😉
My point is that this is a quick and easy meal that the whole family will appreciate. It is also very easily adaptable. Don’t like strawberry yogurt? Use blueberry! Don’t like oats? Use granola!
1 cup strawberry yogurt
½ cup oats
3-5 sliced strawberries
½ cup blueberries
- Put ¼ cup of oats in the bottom of your cup.
- On top of the oats, add yogurt.
- Slice strawberries and add the slices, the blueberries, and remaining oats on top of the yogurt.
- Eat it layered like this or mix it all together.
