Happy December! I hope you all had a great Thanksgiving with your family and friends. We had 4 Thanksgivings this year and decided we are never doing that again. Our daughter was exhausted after days of travel and people. We loved seeing all of our families though and are so blessed to have so much love surrounding our family.
After these past couple of days I am SO OVER turkey. Like done till next year. Now I am going to try to get back to some healthier options after I finish up the pecan pie in my fridge š I don’t really like Chinese take out. I will eat it, but I hate the greasy feeling I have afterwards.Ā That’s why I am obsessed with making Chinese food at home (like this Crock Pot Stir Fry). Fried rice isn’t healthy…at all and this recipeĀ is way healthier than your typical bowl, but it still has the same great flavor.
Ingredients:
2 eggs
1 cup frozen stir fry veggies
1 cup brown rice
1 tbs olive oil
Directions:
- Cook eggs in skillet and remove them from the pan.
- Cook brown rice according to directions on the box. I useĀ MinuteĀ® Brown rice, it’s easy and can be made in 5 minutes.
- Cook veggies in skillet.
I top mine with some soy sauce š
do you think egg beaters could be used instead of real eggs?
Yes. Egg beaters would work great too!
